- Combine active dry yeast and sugar with half of the water
- Combine flour, raisins, hackberries in a large bowl
- Slowly add the yeast mixture and knead the dough
- Little by little add the other half of the water to the dough to obtain the desired consistency, if necessary add more or less water
- Lastly, add the salt and knead well
- Cover the dough with a moist towel and rest 30 mins
- Preheat the oven for 180°C
- Cut the dough into 6 even pieces
- Roll out the dough to 10cm in diameter
- Place on a baking tray and bake until golden brown
- Remove from the oven and lower the oven temperature to130°C
- Bake again until hard and dry
Hints:
Using lukewarm water helps to activate the yeast
Covering the dough with a moist towel prevents the dough from drying
As the salt might kill the yeast, it is important to add it at the very last moment
